These are my new obsession!

I have been craving chocolate & peanut butter the last few weeks and these definitely fulfill that craving.  I put almond butter on top to get that peanut butter type flavor.  I like to put fresh berries on tops as well.  It would be good if you put some mixed nuts or pumpkin seeds too.  I altered the original recipe a bit and added the cacao chips (I can’t remember what brand I use but they are 64% cacao I believe) which is what I think makes it taste even more like chocolate cake or a brownie.  You could seriously eat them plain (which I’ve done) without syrup or anything else.  The best part is you can eat them guilt free!

I am always on the search for a new pancake recipe just because I think its fun to change it up every now and then so you don’t get bored.  These definitely did that!  The best part is you just mix everything together in one bowl and go!  No keeping dry and wet ingredients separate, so less mess!

Chocolate Cassava Pancakes:
– 1/3 cup @ottos_cassava_flour
– 1/4 cup cacao powder
– 1 tsp baking powder
– 1/4 tsp salt
– 2 eggs
– 2 Tbsp maple syrup
– 1 Tbsp coconut oil
– 1 tsp Vanilla extract
– 1/4 cup warm water

-cacao chips

**I used Cacao powder instead of Cocoa powder and added cacao chips

Just mix everything up and make on the stove!

–side note, its difficult to know when they are done since they are so dark brown but just watch and wait until they bubble and look like one side is cooking.
